THK: A (belated) thanks for this tip. Definitely keen to try some cooking classes in Paris. I am actually looking at the classes run by Nicolas Le Bec in Lyon too.

If you have the money I would recommend looking at the Lenotre School in Paris. Unbelievable baking courses, right in the deep end of French patisserie making. I think they do savoury as well, but who can turn down the opportunity to pick a Frenchman's brain about brioche and kouglof?

I am still work-shopping an appropriate pseudonym for you - I think The Clever Chemist has a nice ring to it though (subject to your approval). Definitely plan to spend some time in Lyon. I am looking into a few cooking classes there and would love the name of your double pork place!

So much good to be had. Cheese should be your first priority. Sniff out a fromagerie (literally) get a baguette, sit on the grass and gorge. I think with some remembering we could probably remember where we got foie gras brulee (unbelievable). Are you moving around France? For food you might want to try the bouchons of Lyon. I had some serious boudin noir there. The menu had pigs eating pork!
